For the Salmon Bites

  • 1 lb fresh salmon, cut into 1.5-inch cubes
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup cornstarch (or all-purpose flour)
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tbsp avocado oil (for air frying) or frying oil of choice

For the Bang Bang Sauce

  • ⅓ cup mayonnaise
  • 3 tbsp Thai sweet chili sauce
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tsp lime juice
  • 1 tsp honey (optional, for extra sweetness)

Instructions

1. Prepare the Salmon

  • Pat salmon dry with paper towels and season with salt, pepper, paprika, garlic powder, and onion powder.

2. Set Up the Coating Stations

  • In one shallow bowl, place cornstarch.
  • In another, beat the eggs.
  • In a third, add panko breadcrumbs.

3. Coat the Salmon

  • Dredge each salmon cube in cornstarch, then dip into beaten eggs, and finally coat with panko breadcrumbs, pressing lightly for maximum crispiness.

4. Cook the Salmon Bites

  • Air Fryer: Preheat to 390°F (200°C). Spray the basket with oil, add salmon bites in a single layer, and cook for 6-8 minutes, shaking halfway.
  • Oven: Preheat to 400°F (200°C). Place salmon on a lined baking sheet, spray with oil, and bake for 10-12 minutes, flipping halfway.
  • Pan Fry: Heat 1 inch of oil to 350°F (175°C). Fry in batches for 2-3 minutes per side until golden brown. Drain on paper towels.

5. Make the Bang Bang Sauce

  • Whisk together mayonnaise, sweet chili sauce, Sriracha, lime juice, and honey. Adjust spice level to taste.

6. Serve & Enjoy!

  • Drizzle sauce over salmon bites or serve it on the side for dipping. Garnish with sesame seeds, green onions, or cilantro.

  • For extra crispiness: Double coat by repeating the egg and panko steps.
  • Marinate for more flavor: Let salmon sit in seasoning for 20-30 minutes.
  • Make it gluten-free: Use gluten-free panko and cornstarch instead of flour.
