Instructions

1️⃣ Prepare the Rice:

  • If using freshly cooked rice, spread it on a baking sheet and let it cool for at least 30 minutes. Day-old rice works best for crisping.

2️⃣ Infuse with Coconut Milk:

  • In a bowl, mix the rice with coconut milk, salt, black pepper, and garlic powder. Stir gently to coat evenly.

3️⃣ Heat the Pan:

  • Heat a cast-iron skillet or heavy-bottomed non-stick pan over medium-high heat. Add canola oil and let it shimmer.

4️⃣ Press & Crisp the Rice:

  • Add the rice in an even layer, pressing it down firmly with a spatula to ensure full contact with the pan.
  • Let it cook undisturbed for 4-5 minutes until the bottom turns golden brown and crispy.

5️⃣ Flip & Crisp the Other Side:

  • Carefully flip the rice using a spatula or by sliding it onto a plate and inverting it back into the pan.
  • Cook for another 4-5 minutes until both sides are crispy.

6️⃣ Garnish & Serve:

  • Remove from heat and sprinkle with chopped scallions and sesame seeds.
