Ingredients
Scale
Base & Crisping:
- 3 cups cooked jasmine rice (preferably day-old)
- 1 cup full-fat unsweetened coconut milk
- ¼ cup canola oil (or avocado oil)
Seasoning & Aromatics:
- ½ teaspoon salt (or to taste)
- ½ teaspoon garlic powder (optional)
- ¼ teaspoon black pepper
- ¼ teaspoon chili flakes (optional, for heat)
- ¼ cup chopped scallions
Optional Toppings:
- ½ cup spicy tuna mix (for sushi-style crispy rice)
- 1 avocado, sliced or mashed
- 1 tablespoon sesame seeds
- 1 fried egg (for serving)
Instructions
1️⃣ Prepare the Rice:
- If using freshly cooked rice, spread it on a baking sheet and let it cool for at least 30 minutes. Day-old rice works best for crisping.
2️⃣ Infuse with Coconut Milk:
- In a bowl, mix the rice with coconut milk, salt, black pepper, and garlic powder. Stir gently to coat evenly.
3️⃣ Heat the Pan:
- Heat a cast-iron skillet or heavy-bottomed non-stick pan over medium-high heat. Add canola oil and let it shimmer.
4️⃣ Press & Crisp the Rice:
- Add the rice in an even layer, pressing it down firmly with a spatula to ensure full contact with the pan.
- Let it cook undisturbed for 4-5 minutes until the bottom turns golden brown and crispy.
5️⃣ Flip & Crisp the Other Side:
- Carefully flip the rice using a spatula or by sliding it onto a plate and inverting it back into the pan.
- Cook for another 4-5 minutes until both sides are crispy.
6️⃣ Garnish & Serve:
- Remove from heat and sprinkle with chopped scallions and sesame seeds.
- Serve hot with your favorite toppings like avocado, spicy tuna, or a fried egg!
Notes
- Best Rice to Use: Medium-grain or jasmine rice works best for achieving a crispy texture. Avoid long-grain rice, as it doesn’t crisp well.
- For Extra Crispiness: Use a metal spatula to press the rice firmly into the pan while cooking.
- Avoid Stirring: Let the rice sit undisturbed while it crisps to develop the golden crust.
- Storage Tip: Store leftovers in an airtight container for up to 3 days. Reheat in a skillet over medium heat to restore crispiness.
