  • 1 bulb garlic (4 cloves), minced
  • 300g cherry tomatoes, chopped
  • 5cm piece fresh ginger, grated

  • 200g soft brown sugar
  • 200g white sugar
  • 1 tsp salt

  • 2 tbsp honey (for extra sweetness)

Instructions

Step 1: Prepare the Ingredients

  1. Finely chop the red chillies, removing seeds for a milder jam.
  2. Dice the onions, mince the garlic, and grate the ginger.
  3. Roughly chop the cherry tomatoes.

Step 2: Cook the Jam

  1. In a large pot, combine all the ingredients.
  2. Bring to a boil over medium heat, stirring occasionally.
  3. Reduce heat and let it simmer for 50–60 minutes, stirring frequently.
  4. The jam should thicken and turn syrupy. If too runny, continue cooking for 10 more minutes.

  2. Seal tightly and let cool at room temperature.
