Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed (or 1 ½ cups cooked chickpeas)
  • ¼ cup high-quality tahini
  • 2 tablespoons fresh lemon juice (about ½ lemon)
  • 1 small garlic clove, minced
  • 2 tablespoons extra virgin olive oil, plus more for garnish
  • ½ teaspoon sea salt
  • 23 tablespoons cold water (adjust for desired consistency)
  • ½ teaspoon ground cumin (optional, for extra flavor)
  • ¼ teaspoon smoked paprika (for garnish)

Instructions

Step 1: Prepare the Chickpeas

  1. If using canned chickpeas, drain and rinse them. For an ultra-creamy texture, peel the chickpeas by gently rubbing them in a clean towel to remove the skins.

Step 2: Blend the Base

  1. In a food processor or high-powered blender, blend tahini and lemon juice for about 1 minute until creamy and slightly thickened. This step helps emulsify the tahini, leading to a smoother hummus.

Step 3: Add Remaining Ingredients

  1. Add chickpeas, minced garlic, olive oil, salt, and cumin (if using). Blend for 1–2 minutes, scraping down the sides as needed.

Step 4: Adjust the Consistency

  1. With the food processor running, drizzle in 2–3 tablespoons of cold water, one tablespoon at a time, until the hummus reaches your desired creaminess.

Step 5: Serve & Garnish

 

  1. Spoon the hummus into a bowl, drizzle with extra olive oil, and sprinkle with smoked paprika or chopped parsley. Serve with warm pita, fresh vegetables, or crackers.

Notes

  • For ultra-smooth hummus: Simmer chickpeas in hot water with ½ teaspoon baking soda for 10 minutes, then drain and peel.
  • Storage: Store hummus in an airtight container in the fridge for up to 5 days.
  • Make it extra creamy: Use ice water or a tablespoon of aquafaba (chickpea cooking liquid) while blending.
