  • 2 tbsp keto-friendly sweetener (monk fruit, erythritol, or Swerve)
  • 2 ½ tbsp ground cinnamon
  • 2 tbsp chopped pecans (optional)
  • 1 tbsp softened butter

Instructions

  • Preheat & Prep

    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Make the Dough

    • In a microwave-safe bowl, melt the mozzarella cheese until fully melted. Stir well.
    • Add almond flour, flax meal, eggs, and xanthan gum. Mix until a smooth dough forms.
    • Place the dough between two sheets of parchment paper and roll it into a ¼-inch thick rectangle.
  • Prepare the Filling

    • In a bowl, mix cream cheese, sweetener, cinnamon, and butter until smooth.
  • Assemble the Roll-Ups

    • Spread the cinnamon-cream cheese filling evenly over the dough.
    • Sprinkle chopped pecans if using.
    • Roll the dough tightly into a log and slice into 1-inch pieces.
