  • 3 cups cooked rotisserie chicken, shredded
  • 2 cups fresh broccoli florets (or spinach)
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

For the Creamy Sauce:

  • 1 cup heavy whipping cream (or coconut cream for dairy-free)
  • 4 oz cream cheese, softened
  • ½ cup low-sodium chicken broth
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp red pepper flakes (optional, for spice)

Instructions

1. Prep & Sauté the Veggies

  1. Preheat oven to 350°F (175°C).
  2. Heat butter in an ovenproof skillet over medium heat.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Toss in broccoli florets and cook for 3-4 minutes until slightly tender.

2. Make the Creamy Cheese Sauce

  1. Reduce heat to low and add cream cheese to the skillet. Stir until melted.
  2. Pour in heavy whipping cream and chicken broth, stirring continuously.
  3. Season with garlic powder, onion powder, Italian seasoning, salt, pepper, and red pepper flakes.
  4. Simmer for 2-3 minutes until the sauce thickens slightly.
  5. Stir in 1 cup of mozzarella cheese and Parmesan cheese. Continue stirring until smooth.

3. Assemble & Bake

  1. Add the shredded chicken to the skillet, mixing well to coat with the sauce.
  2. Sprinkle sharp cheddar and remaining mozzarella cheese on top.
  3. Transfer skillet to the oven and bake for 10-12 minutes until cheese is bubbly.
  4. For a golden-brown top, broil for an additional 1-2 minutes.

4. Serve & Enjoy

  • Let the casserole rest for a few minutes before serving.
  • Garnish with fresh parsley or extra Parmesan if desired.
