Instructions
Step 1: Prepare the Beans
- Sort and rinse the dry red kidney beans.
- Soak overnight (or for at least 8 hours), then drain and rinse.
Step 2: Assemble the Slow Cooker
- Add soaked beans, chicken broth, onion, bell pepper, celery, garlic, bay leaf, and seasonings into a 4 to 5-quart slow cooker.
- Stir to combine.
Step 3: Slow Cook the Beans
- Low heat: Cook for 8-10 hours.
- High heat: Cook for 4-5 hours.
Step 4: Add Sausage & Mash Beans
- About 30-45 minutes before serving, add sliced sausage to the slow cooker.
- Mash about 85-90% of the beans against the side of the pot to thicken the dish naturally.
Step 5: Final Seasoning & Serve
- Taste and adjust seasoning with salt and pepper.
- Serve hot over cooked rice.
- Garnish with fresh parsley and a drizzle of hot sauce.
Notes
- Soaking Tip: If short on time, use the quick soak method—boil beans for 10 minutes, then let sit for 1 hour before draining.
- Vegetarian Option: Replace sausage with smoked tofu or plant-based sausage and use vegetable broth.
- Spice Level: Adjust heat by adding cayenne pepper or serving with Creole hot sauce.
- Storage: Store in the fridge for 4-5 days or freeze for up to 3 months. Reheat with a splash of water to maintain texture.
