To Serve:

  • 4 cups cooked white rice (or brown rice, quinoa, or jasmine rice)
  • Hot sauce, for garnish
  • Fresh chopped parsley, for garnish

Instructions

Step 1: Prepare the Beans

  1. Sort and rinse the dry red kidney beans.
  2. Soak overnight (or for at least 8 hours), then drain and rinse.

Step 2: Assemble the Slow Cooker

  1. Add soaked beans, chicken broth, onion, bell pepper, celery, garlic, bay leaf, and seasonings into a 4 to 5-quart slow cooker.
  2. Stir to combine.

Step 3: Slow Cook the Beans

  • Low heat: Cook for 8-10 hours.

Step 4: Add Sausage & Mash Beans
