Instructions

Step 1: Prepare the Filling

  1. If using frozen spinach, thaw it and squeeze out all excess liquid. If using fresh spinach, sauté in a dry pan for 2-3 minutes, then squeeze dry.
  2. In a large bowl, mix the spinach, ricotta, Parmesan, minced garlic, 1 egg, salt, pepper, and oregano. Stir until well combined.

Step 2: Prepare the Pastry

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Lightly flour a clean surface and roll out the puff pastry sheets slightly to smooth them out.
  3. Cut each puff pastry sheet in half lengthwise to create 8 smaller rectangles.
