- ¼ cup brown sugar (for depth of flavor)
- ½ cup buttermilk (or milk with 1 tsp lemon juice)
- 1 tsp vanilla extract or vanilla bean paste
- ½ tsp baking soda
- ¼ tsp salt
Instructions
- In a medium saucepan over low heat, melt the butter.
- Stir in the granulated sugar, brown sugar, and buttermilk, whisking until combined.
- Bring the mixture to a gentle simmer over medium-low heat, stirring continuously.
- Add the baking soda and salt, and stir well. The mixture will bubble up.
- Remove from heat and stir in the vanilla extract or vanilla bean paste.
- Let the syrup cool slightly before serving. It will thicken as it cools.
- Store in an airtight container in the refrigerator for up to 2 weeks. Reheat before serving if needed.
Notes
- For a stronger vanilla flavor, use vanilla bean paste instead of extract.
- To prevent crystallization, avoid stirring once the syrup begins to simmer.
